There is no substitute for both Epazote's powerful flavour and the fact that it is best know for effectively counteracting the gas inducing effect of beans.
Common to Mexican cooking, fresh epazote should be your first choice but it is often difficult to find. When substituting our dried herb, use one-half the amount specified for fresh leaves. Because of its use as a digestive aid, epazote is most commonly found in bean dishes. It is also used in soups and moles.
It has a very powerful, tangy flavour that reminds one of licorice and oregano.
