Anise is a member of the family of plants that includes carrots, caraway, cumin, dill, fennel, and cilantro. It has a strong licorice-like flavour and scent, and the essential oil is used to flavour licorice candy. Foods with licorice flavouring often contain anise and not any licorice at all.
Anise is used in French carrot dishes, East Indian curries, Hispanic stews, and Scandinavian breads. It balances the flavours of bay leaf and cinnamon. It is used to flavour liqueurs such as ouzo. In small amounts, anise makes a nice addition to sausage, or in tomato sauce.
The Romans ended their elaborate feasts with anise cakes, as anise has long been used to aid in digestion.
