Cinnamon, Ceylon - True Cinnamon
Called sweet cinnamon, or true cinnamon, this subtle and beautiful bark comes from Sri Lanka. Praised for the health benefits including a recommendation from doctors about the aid it gives the body with sugar processing. Unlike cassia, which has a thick bark, true cinnamon has delicate, papery quills made of many layers.
This is the preferred cinnamon of Europe and Mexico. It's often called for in pickling, spiced pears or peaches, and in the brewing of hot cocoa. It's light flavour is perfect in such dishes as custard, ice cream, stewed fruit, steamed puddings, dessert syrups, or mixed into whipped cream.
You will find its flavour to be quite distinct from cassia cinnamon. Ceylon cinnamon has a much lower volatile oil content, and thus a much lighter flavour with a subtle complexity that you won't experience with the stronger, spicier cassia. You might even notice the delicate flavour of citrus interwoven in the scent of this cinnamon.
The quest for cinnamon was one of the major factors that led the Europeans to explore the world in the 15th century. Cinnamon’s value in the 1st century C.E. was said to be that 350 grams of cinnamon was equal to 5 kilograms of silver, or about 15 times the value of silver per weight.
