Fruity, tart and lemony; sumac is a berry that is flaked and used for flavour as well as garnish thanks to its beautiful deep red / maroon colour.
Add a little sumac on anything that would benefit with a splash of lemon juice! Try with salad dressings, chicken, fish, rice pilaf, or over raw onions. It is fantastic sprinkled over hummus. There is even a little known drink called sumac-ade, which is similar to lemonade and is made with Sumac.
Sumac is considered essential for cooking in much of the Middle East; it was used as the tart, acidic element in cooking until the introduction of lemons by the Romans.
